This chicken soup is super easy but the gut healing benefits are NEXT LEVEL!

We all know now that most diseases begin in the gut… so we need to take extra special care of the little guy by feeding it the most nutrient dense healing wholefoods.

 

Enter the Wholesome Chicken Soup! I have created it to be not only gut healing, but also, Low FODMAP, gluten free and fructose friendly, so even my fellow food intolerance friends can enjoy this delicious bowl of goodness.

 

OK so lets get down to the good stuff… the cooking! It will honestly take you about 10 mins to prep are start the cooking, then you can leave the soup to simmer for a couple of hours.

 

Its such a good meal to whip up and save for left overs, freezers really well – WIN!

WHOLESOME CHICKEN SOUP

Ingredients (*choose organic where possible)

  • Knob of Ginger, approx. 4cm
  • 3 Carrots (peeled and diced)
  • ½ bunch of Celery (diced)
  • 2 Zucchinis (peeled and diced)
  • 1 whole Chicken
  • 3 Bay leaves
  • Salt & Pepper
  • 2 tbsp Garlic Oil
  • 2 tbsp Turmeric (ground)
  • 1.5L water

Method

Prep veggies, as advised above.

Heat garlic oil, add vegetables and cook until they soften. Approx. 5 minutes.

Add remaining ingredients, bay leaf, salt/pepper, turmeric, water and whole chicken.

Bring to the boil. Once boiled, bring down to a gentle simmer and allow it to simmer for 2 hours or more if you choose.

Once cooked, remove the knob or ginger, bay leaves and whole chicken.

Shred the chicken, discard bones and place back into the soup.

Serve immediately with Paleo Seeded Bread or your choice of bread.

The soup can be left in the fridge for 4 days and longer in the freezer. Note, a layer of jelly like substance will appear on the top of the soup, this is gelatine from the bones, ligaments and tendons it’s the GOOD STUFF! Just mix through and heat (you won’t even know its there)
