Peanut Butter Choc Chip Cookies!

 

OK, so I am a massive sweet tooth for chocolate! My love started from a young age… and I am a huge believer in balance and never ever depriving yourself of something you love.

So, I look for ways to create my treats in a nourishing way that my body will love as much as my taste buds. There are so many health benefits if we make these treats with wholesome ingredients!

ENTER…. PEANUT BUTTER CHOC CHIP COOKIES

(DROOLWORTHY!!)

Side Note: I actually made this recipe, when I went through a huge Peanut Butter Lover stage.
However, this has slightly changed (I am still a huge LOVER) but unfortunately, it doesn’t love me! Prime example of listening to your body.

I’m not sure if I’m the only one who didn’t know this…. BUT… Peanuts, do not belong to the nut family. They are in fact a legume.
Regardless of this, these cookies are to die for DEEEELISH! So give them a try and tell me what you think.

INGREDIENTS (*CHOOSE ORGANIC WHERE POSSIBLE)

  • 1 Cup      Spelt Flour/Gluten Free Flour
  • 2/3 Cup   Almond Meal
  • 4 Tbsp.    Rice Malt Syrup
  • 3 Tbsp.    Coconut Oil
  • 1 Tsp.      Vanilla Essence
  • 1.5 Tsp.   Baking Powder
  • 2 Tbsp.    Peanut Butter (Smooth)
  • 1 Cup      Dark Chocolate Chips
  • 3 Tbsp.   Coconut Yoghurt (You can also use Greek or Plain)

METHOD

Pre-heat the oven (fan forced) to 180 degrees.

Add all ingredients (except for the choc chips) to your food processor.

Once the ingredients have created a doughy texture, add the choc chips and mix together (MANUALLY, with your hands) don’t be afraid to get in there! This is the best it.

Now it’s time to roll… Approx. a Tbsp. of mixture, roll in to balls. Place these onto your tray that is lined with Baking Paper. Then slightly flatten.

Place into the oven for 10-12 minutes or until golden brown.

You will have golden delicious cookies, with a crunchy outside and soft gooey on the inside – Perfection!

See totally simple and oh so yummy! Feel free to play around if you want to add Medijool dates instead of the Rice Malt Syrup or you prefer Almond Butter instead of peanut better. The choices are endless. I hope you enjoyed this little recipe as much as I do.
