Chicken Sesame Stirfry

I am constantly asked for QUICK after dinner work meals, you can throw together without thinking that of course are full of flavour and nourish your insides… easy right?!

YES, it is easy when you can create this bad boy. My little creation came about because I know the feeling all to well, when you finish work, or get home late and CBF making anything. You almost want to order uber eats and pass out on the couch, but I promise you, THIS is quicker and more nourishing that Uber eats.

With a few spices, a couple of staple veggies and some chicken you have yourself and jam packed wholesome dinner. I have your dinner inspo sorted and your hubby/kids etc will thank me!!

I call this my 20minute fridge to plate, and I am in the middle of creating a special series for all my boss babes! Aint nobody got time for slaving away in the kitchen erry night!! Stay tuned my lovelies…

Oh and did I mention that this delish dinner is Gluten-free, Lactose Free, Fructose Friendly, LOW Fodmap AND DAMN FREAKING TASTY!!!

So now we have this sorted, and our tummies are happy, we have a serious decision to make… what TV show we can chillout and watch… currently we are tossing up between The Batchelor and Australian Survivor… haha

CHICKEN SESAME STIRFRY

Ingredients (*Choose Organic Where possible)

  • ½ cup Quinoa, rinsed
  • 1 Zucchini, sliced with peeler or zoodles
  • 1 cup String Beans
  • 6 Celery stalks, sliced
  • 1 cup Bean Sprouts
  • ½ Lemon, cut in wedges
  • 2 tbs Tamari Sauce
  • 1 tsp Chinese 5 spice
  • ½ tsp Chilli flakes
  • 2 tbsp. Sesame Seeds
  • 2 tsp Sesame Oil
  • 1 tsp Garlic Oil
  • 500g Chicken Breast fillets, cut in strips

Method

Rinse Quinoa.

Bring quinoa and 1 cup of water, to the boil in a medium saucepan. Reduce heat to low, cover and simmer until most of the liquid has been absorbed approx. 15 to 20 minutes. Fluff with a fork. Set aside.

Combine tamari and spices and marinate chicken.

Heat a wok over medium heat with garlic oil.

Add Celery, cook for 1 minute.

Add zucchini and beans and cook for another 5 minutes.

Remove chicken from marinade and roll in sesame seeds.

Add chicken to wok.

Divide quinoa between plates and top with the stirfry and add bean sprouts.

Serve with a squeeze of lemon.
