Pumpkin, Pine Nut, Feta & Rocket Salad

This salad is soo good! It works as a great side or on its own. It is loaded with good fats like, Avacado, Olicve Oil, Flaseed Oil AND Pine Nuts, these will keep you feeling fuller for longer and not need to over indulge.

Pine Nuts contain numerous health promoting phyto-chemicals, vitamins, antioxidants, and minerals. Who knew that something so tiny could be so nutrient dense.

Dont forget about these bad boys next tine you are cooking, they are great to add to salads or roast veg. They taste delish lightly roasted, adding a Crunch to your salad.

INGREDIENTS (*CHOOSE ORGANIC WHEN POSSIBLE)

  • 2 handfuls Rocket
  • 1 handful Spinach
  • ½ Avocado
  • ½ Pumpkin
  • ¼ cup Pine Nuts
  • Drizzle Flaxseed Oil, Olive Oil
  • 1 tbsp Garlic Oil
  • Goats Feta Cheese
  • Himalayan Salt
  • Cayenne Pepper

METHOD

Preheat oven to 180C.

Dice Pumpkin into 2cm cubes.

Place into baking tray, lightly coat with Garlic Oil, sprinkle Himalayan Salt and Cayenne Pepper if you like a touch of spice.

Place into the oven for 15-20mins or until lightly brown.

In a salad bowl, add Spinach, Rocket and Avocado.

Once the Pumpkin has been in the oven for 10-15mins add the Pine nuts, to lightly toast.

Remove from oven and allow to cool. Add to the salad bowl.

Sprinkle Goats Feta, and lightly drizzle Flaxsed Oil and Olive oil.

You could even add Roast Capsicum and lemon juice, if you wanted something extra!
